Peking Duck
The skin of the duck has been specially prepared and oven cooked to give a crisp and tasty sensation.  The skin is carved seperately and place on a pancake with shallot piece and fruit sauce.  Roll the pancake with shallot piece and fruit sauce.  Roll the pancake around the skin and enjoy the taste sensation of many flavours.  The second course is the meat of the duck accompanied by fresh Chinese seasonal vegetables.

This is a typical Cantonese provincial dish, a mixture of finely chopped Bar-B-Q pork, water chestnuts and mushrooms cooked with a touch of gralic and served with selected lemon leaves.

The chicken is coated with honey & vinegar before roasting. After roasting the chicken is cut into pieces & decorated with mermaid tress (Finely sliced Chinese cabbage leaves slightly coated with sugar granules then deep fried to a delicate crispy taste which can be eaten on its own or with the chicken pieces.)
